Fermented vegetable ketchup will be your new obsession - I promise.

As a lover of all things fermented - kimchi, miso, kombucha, gherkins, sourdough bread, you name it and I've tried it! - this was music to my ears. Never a week goes by when I don't have a fresh pot of fermented cabbage tucked in the back of the fridge and as a Brit I wouldn't feel sane without a squeezy bottle of Heinz tomato ketchup at the ready, so this new condiment combo felt like a match made in heaven.
Great first impressions before I'd even opened the bottle as Chimac's branding includes bold colours and adorable character illustrations to decorate their products, which come in a glass bottle with a screw cap.
I kept things simple by cooking up a batch of crispy fried tofu on a bed of lettuce, topping it off with sliced spring onion and a drizzle of Chimac's kimchi ketchup. My meticulous presentation didn't last long as once I'd tasted the sauce, I couldn't help but grab the bottle and dollop another hefty serving of the stuff right on top.
Somewhere between sweet and savoury, this sauce is like nothing I've ever tried before. Its distinctly ketchup-y, but the added zing of the kimchi took it to the next level that Heinz just hasn't quite mastered.
Tart, zesty and packing a punch, yet mild enough to accompany almost any dish without overpowering the flavour, Chimac's sauce created a depth I never knew I needed and kept me double dipping until the whole plate was polished off.
Still hungry and in need of another fix, I whacked on the airfryer and made some loaded fries with skin-on chips, melted cheese and pickles with a healthy splodge of my latest obsession - new midnight snack unlocked.
I urge you to try it for yourself - whether you're a seasoned sauce lover or looking for something exciting to spice up your mid-week dinners, I promise you'll never have tried anything like it.
